How come Chinese people eat such a high-carb diet that is centered on rice or noodles yet don't have diabetes?
Q. Chinese people eat rice or some form of carbohydrates in every meal. Western media seems to portray high-carb is fattening and bad, but how come Chinese people who have them as staple foods do not become fat?

A. There are a couple of things going on here. First, our version of Chinese food is different from what they eat. Take chow mein for instance - saturated in oil, fatty meats, corn starch, and sugar. The Chinese tend to eat just rice, veggies, and lean meats like chicken and fish. Yes the rice has carbs, but it's whole grain and nowhere near the amount of carb that our stuff has. There might also be genetic factors. Unfortunately, they are starting to pick up our habits and tastes. McDonald's is growing like crazy over there, and more people are driving cars rather than walking or using bicycles like they used to. Here's just one article about the rise in diabetes in children there.

How come chinese translations are posted in some government offices of Vancouver?
Q. I thought that in Canada, there are only two major languages - English and French. But how come in Vancouver schools and some government and nonprofit offices, chinese translations are posted beside english announcements instead of the french translation? If chinese translations are provided, how come other languages were not provided? Are the chinese exempted from learning English? Will Vancouver eventually be a Chinese speaking area just like the French speaking areas in Quebec?

A. Because Vancouver was a popular place for Chinese immigrants from Hongkong, China and etc. The Chinese population must have increased quite a fair bit, and that some of these Chinese do not know how to speak English and French. Hence, the authorities place chinese translation for these people. As for not having french, maybe they think most Canadians are conversant in both English and French, hence only one major language is required to convey the posts

Q. My husband and I are both on Weight Watchers, but we are craving Chinese food. We are sick of stir-fry, so what are some other healthy Chinese food dishes we can cook at home? Skill level and equipment are not an issue - I have all sorts of kitchen gadgets. Thanks!

A. here are several from my cook book. Kung Pao Tofu 1 Tbs. rice wine 1 Tbs. peanut oil 1 Tbs. soy sauce tsp. kosher salt 1 Tbs. cornstarch 1 package extra firm tofu, drained and cut into 1/2" cubes In a Zip-lock bag combine the above ingredients and close bag. Shake well to combine, place in a refrigerator for 20 to 30 minutes. 3 Tbs. light soy sauce 2 Tbs. rice wine 3 Tbs. rice vinegar 2 Tbs. sugar 2 Tbs. Hoisin sauce 2 Tbs. peanut oil 4 dried red chilies, stems removed and halved inch piece ginger, peeled then mashed 1 clove garlic, peeled and mashed 1 green onion, cut in inch pieces; greens julienne for garnish c. roasted peanuts or cashews 2 Tbs. chicken stock 1 Tbs. cornstarch, combined with chicken stock to make a… [cont.]
